The winter landscape encompasses: valley and hillsides, wide frozen lakes, forests of evergreens, maples and birch, old-fashioned villages built around imposing churches. At the ranch, your hosts offer a warm holiday welcome, all gathered around the ever so generous dining table with exceptional Gastronomy meals prepared by French trained chef, Gilles. The magic of this snowbound wonderland sparks the imagination and awakens the old myths of trappers, lumberjacks and early settlers. Just for the fun of it, try dog sledding, cross-country skiing or snow shoeing.
The wonderful atmosphere and remote location beautifully complement the Gourmet Food and the opportunity to enjoy the ranch spa.

SAMPLE ITINERARY - SNOWY LANDSCAPES
Programme There is no set intinerary for this holiday as it is designed to be very flexible and adaptable. There are daily trail rides available that consist of around 4 hours. The programme is available between December and the end of March. The food on this ride is outstanding!
On the last day you can be dropped off in Quebec City in the morning to enjoy a day exploring this colourful and historic city. The city is small enough to get around on foot and has many small cobbled streets, ramparts and cafes/art galleries. The atmosphere with the snow and the adjacent St Laurence seaway is unforgettable.
Horses and Riding Horses are Quarter horses, Appaloosas or Canadians, all good natured and gentle and perfectly adapted to the terrain. Some are more spirited and there are some real schoolmasters.
Riders should be able to walk, trot and canter on a good horse and have experience hacking out. Riding is at all paces weather permitting. The terrain is varied with gently rolling hills and soft tracks, woods and view points. English or Western tack is available.
Accommodation and Food Accommodation is in comfortable lodgings, the Country Inn has single and double rooms most en suite. The Inn also has a hot tub/jacuzzi and can arrange massage - the Swedish Hot Stone massage is particularly recommended! Bliss after a ride in the bracing snow.
The food is a real feature of this ride. Gina's husband Gilles trained as a chef in the southwest of France before moving to Quebec province. Most of the produce is grown either on the farm of locally and organically and the flavours are exceptional. The Inn has a restaurant which is popular with locals and offers outstanding food. Riders who are willing to share will not have to pay a single supplement.
Other Activities There are many beautiful lakes around the ranch, Lake St- François, 30 km long, Lake Drolet 10 km long, Lake Mégantic 20km long - 30 min driving, all are usually frozen in the winter with beautiful scenery. Snow mobiling, dog sledding, cross country skiing and snow shoeing are typical winter activities available to try out.
Extensions We suggest the historic city of Quebec as being a wonderful few days to add on to this trip.
